Panning is an original, artisan method of chocolate coating fruit and nuts (or any center) and one of the oldest technical skills of chocolate making. Chocolate is slowly poured over centers in a tumbling coating pan. The speed of the pan’s circulation and the viscosity of the chocolate is carefully controlled by the chocolate maker. The friction created by the tumbling action in the pan distributes the chocolate evenly on every center.

The Selmi Comfit is equipped with an electric speed control that optimizes the coatings of different type and size products. In addition, the introduction of air into the rolling tank cavity is controlled by a cooling unit which speeds up the size increase of the finished product while chocolate is being added. During the final phase, it is possible to smooth and polish the product and clean the machine. A thermo regulator on the control panel enables the temperatures to be regulated to suit the required process.

Selmi Coating Pan – Comfit Maxi

Up to 132 lb Tank Capacity

The Selmi Comfit Maxi is equipped with an electric speed control that optimizes the coatings of different type and size products. Selmi Coating Spray System

The spray system works exclusively with Selmi Comfit coating machines. Its heated and thermo-regulated in low voltage, and constructed entirely in food-safe treated aluminum. The system is mounted on a stainless steel trolley for easy maneuvering, and the top is removable for cleaning.
