About This Class:

Gonzo Jimenez, corporate chef for Republica del Cacao and celebrity chef will be teaching at Tomric once again this year. Chef Gonzo is known for his innovative approach to classic flavors, and for his hit Netflix show, Bake Squad. For this class, Chef Gonzo will help participants unleash their creativity and put a modern spin on a variety of popular American treats!

This class will be a fun hands-on workshop where you’ll be learning modern confections and patisserie. The class will focus on classic American flavors with contemporary presentations and innovative techniques.

 

About In-Person Classes at Tomric:

Please plan to arrive at our facility all three days for breakfast no sooner than 8 am. Demonstrations will begin at approximately 8:30 am and end at 4 pm each day (class on the last day will end at 3 pm (with some flexibility to allow for those who need to catch a flight to leave). So, plan your travel accordingly. Breakfast and Lunch will be provided on all three days (if you have specific dietary restrictions, please let us know in advance).

Also, please be aware that these courses will not be recorded like the previous virtual classes at Tomric. We will be providing printed materials containing all recipes used in the course.

 

About Chef Gonzo Jimenez:

Chef Gonzo Jimenez was born in Northern Argentina and raised in a Spanish household surrounded by good food and long family meals. At the age of 17, he started working in restaurants and fell in love with the culinary world. He enrolled in pastry and culinary school in Buenos Aires. After completing his studies, he traveled around the country working for 5-star hotels and celebrity chefs.

From 2009 to 2013, Chef Gonzo worked for large hotels in the United States including the St. Julien in Boulder, CO, and The Hyatt Corporation in New Orleans and New York. Most notable among his various accomplishments throughout this period was the launch of his personal line of chocolates, providing different hotels throughout Manhattan, NY with high-end confections.

In 2013, he moved back to South America to work at the Grand Hyatt Hotel in Santiago de Chile. Soon after he accepted a highly coveted position with Barry Callebaut as a Corporate Chef for the South American Region and Director of the Chocolate Academy in Chile.

Chef Gonzo has traveled throughout North and South America teaching classes and performing demos. His work and creations have been published in European and North American pastry magazines such as SoGood, Dulcypas, Dessert Professional, New York Times, etc.

He is currently the Chef and technical advisor for Republica del Cacao in the US and Canada, and co-owner of Miette et Chocolat in Denver Colorado. You can also see chef Gonzo in the second season of his Netflix show, Bake Squad.

What to Bring:

No tools or supplies are needed, we will provide everything. Dress comfortably and ready to work as this is a hands-on course.  Comfortable closed-toe shoes are highly recommended. We have guest chef coats for you to borrow, but of course, if you have your own, please feel free to bring them with you.

We also recommend that you bring business cards…you are here to learn, but don’t forget to network as you have a room of professionals around you that have come from all across N. America.
