About the Class:
This 3-day training course was specifically designed for experienced chocolatiers and pastry chefs to enhance and refine their skills and artistry in the niche area of chocolate showpieces. With only 8 students in the class, each participant will master their technique through demonstrations and one-on-one, hands-on training with Chef Cheveau himself! Each student will leave the class feeling empowered to create exquisite, showstopping chocolate showpieces at their restaurant or in competition.
About Chef Florent Cheveau
Florent Cheveau has a celebrated 23-year pastry career. He most recently was honored by Caco Barry® in 2018 as one of the world’s top chocolatiers at the World Chocolate Masters Competition in Paris, France. Representing the United States and competing against 20 reputable chefs from across the globe, Chef Cheveau walked away with the esteemed third-place title. When he’s not competing in prestigious international chocolate competitions, Chef Cheveau serves as the executive pastry chef at the MGM Grand in Las Vegas.
