Selmi’s cooling tunnels are ideal for both artisan and industrial chocolate makers. The warm product is delivered to the tunnel by an adjustable conveyor belt, where it is cooled by low-temperature forced air. The refrigeration system and the belt’s conveyor are controlled through a digital panel.

 

 

Digital Control and High Capacity

The Selmi Cooling Tunnels enclose and cool product along the entire length of chamber. The digital touch screen panels control the temperature and speed to adjust the cooling rate for various product types. The machines were designed to allow working with more than one chocolate tempering machine, which can be swapped over upon changing the color of the coating.

Selmi Enrobing & Cooling Tunnel Line – Tun 300/400

This Selmi Enrobing Unit cools chocolate-enrobed and molded goods using an air diffuser located along the whole length of the cooling chamber. Productivity speed ranges from 12 – 78 in/min (30 – 200 cm/min). Constructed from stainless steel, equipped with a double chocolate curtain, loading and operating section, and a blower to remove excess chocolate. The chocolate enrobing belt speed works independently from the cooling tunnel belt speed.

Selmi Enrobing & Cooling Tunnel Line – Tun 800/1200

This Selmi Enrobing Unit cools chocolate-enrobed and molded goods using an air diffuser located along the whole length of the cooling chamber. Productivity speed ranges from 12 – 78 in/min (30 – 200 cm/min). Stainless steel construction, equipped with a double chocolate curtain, loading and operating section, and a blower to remove excess chocolate. The chocolate enrobing belt speed works independently from the cooling tunnel belt speed. These cooling tunnels require the Top EX to operate.

Selmi Spin 500 Vertical Cooling Tunnel

The Spin 500 is designed for cooling molds in a compact space where a standard cooling tunnel would not fit. The molds are rotated and lifted through the different levels of the machine and the cooling tubes follow each mold for maximum cooling. This machine can be hand fed with molds or it can be connected with the Tuttuno One-Shot, Mold Loader 175 & Mold Loader 275.

Selmi Mold Loader 175

Automatic transfer loader for filling, vibrating and leveling polycarbonate molds 11″ x 7″ (275 x 175 mm). The system uses the Top EX tempering device and, with greatly reduced dimensions, performs the same automated operations reserved up to now for traditional industrial lines. There are 4 mold movements and 4 workstations: filling via perforated pouring head, 1st vibrating level, pneumatic surface leveling and 2nd vibrating level. The mold is expelled directly into the cooling tunnel for the subsequent removal of the chocolate.

Selmi Mold Loader 275

This machine performs automatic filling, scraping off excess chocolate and vibrating of chocolate deposited in poly-carbonate molds 11″ x 7″ (standard 275 x 175 mm). It also can create shells by filling and turning the mold over to empty the excess chocolate. With this machine you can create shells or solid chocolates. The Molding Line 275 is designed to integrate with the Selmi Top EX and TUN 800 by filling and advancing the molds through the Cooling Rail system. The bi-directional cooling tunnel belt returns the filled mold once it has advanced through the upper-level cooling stage. The molds are then returned via the belt to the operator for de-molding and placement back into the Mold Loader magazine. Throughput in terms of weight varies based on the quantity chocolate deposited; molds are advanced at the top rate of 8 molds per minute.

Selmi Chocoform & Chocoliner Machines

The Chocoform is an innovative machine that works with pressure upon a cylindrical cartridge (made of chocolate and hazelnut, almond etc.) for higher quantities of chocolates production in a certain shape. The cartridges, previously made by pre-crystalizing the recipe into a tempering machine from our EX-range (EX= tempering machine with removable screw for Easy cleaning), will be formed into the chosen shape and size by the Chocoform machine. The Touch Screen panel will show the pressure and all other parameters and according to the settings, a synchronized blade will cut the chocolates to the chosen size. The settable speed will also determine the hourly production.

The Chocoliner machine, consisting of four aligners, is located between the extruder and the coating belt and optimises the productive capacity of the line.

By making use of an oscillatory motion with adjustable steps the product is sorted into lines, transported towards the coating zone and subsequent cooling in the tunnel. It should be noted that the entire process is automated and does not require the manual input of the operator, hence avoiding damage to the previously extruded product.
